JOHN NSOR-ATINDANA

john nsor atindana 1486459338Dr. John Nsor-Atindana is a Lecturer at the Department of Nutrition and Dietetics, school of Allied Health Sciences, University of Health and Allied Sciences (UHAS).

Education

He has a PhD in Food Science and Technology from Jiangnan University, China. Prior to the award of his PhD, he obtained a Master’s degree in Food Science and Technology from the same university. John had his Bachelor of Science at the University for Development Studies in Ghana.

Work Experience

Before joining the University of Health and Allied Sciences, Dr Nsor-Atindana worked as Lecturer at Wa Polytechnic where he was appointed as the Acting Head of Department of Catering, Hotel and Institutional Management. 

Dr John Nsor-Atindana worked as a nutritionist for one year with the Ghana Health Service. During this period, he was a core member of the Fanteakwa District Health Management, Begoro. He was an Assistant Nutritionist of the district responsible for monitoring and evaluation of growth monitoring activities, vitamin A supplementation programmes and exclusive breastfeeding programmes in the Fanteakwa district.

Science /Research Output

Dr Nsor-Atindana’s areas of research include the following:

  • Nanotechnology, Nutraceuticals and functional foods: plants bioactives in the control of digestions of lipids and starch, antioxidants, plants protein peptides, etc
  • Digestion modelling: in vitro and In vivo digestion models and control of metabolic syndromes eg diabetes etc.
  • Controlled delivery systems: emulsion systems, coacervates, encapsulations, etc)
  • Food Hydrocolloids and functional dietary fiber: e.g polymers physicochemical properties behavior in the GIT, rheological properties and impact on digestion, extraction and characterization, etc
  • Prebiotics and Probiotics and product development
  • Food safety and food microbiology

He has over 30 science citations indexed publications in a number of international peer-reviewed Journals.
