Dr. Fidelis Mawunyo Kwasi Kpodo is a Senior Lecturer in the Department of Nutrition and Dietetics, University of Health and Allied Sciences (UHAS).
Education
He received his PhD in Food Science and Technology and BSc. Biochemistry degrees from Kwame Nkrumah University of Science and Technology, Ghana. He also had an MPhil. degree in Food Science from University of Ghana and a Post Graduate Diploma in Education from University of Cape Coast, Ghana.
Dr. Kpodo is a World Bank Group-Robert S. McNamara Fellow. He was a research affiliate in the University of Huddersfield, UK. His major research activities are focused on isolation and characterization of bioactive polymers/functional ingredients from underutilized plants for useful application in food and non-food products.
Work Experience
Prior to becoming a lecturer at UHAS, he taught at Ho Technical University for four years and was a chemistry teacher in Presbyterian Boys’ Senior High School, Legon for six years
Science/Research Output
Dr. Fidelis Kpodo has research experience in the area of chemistry of food macromolecules/bioactive polymers. As a visiting researcher in the Department of Biological Sciences, University of Huddersfield, UK, his research activities have focused on the isolation and characterization of biopolymers from new sustainable sources for their beneficial applications in food and non-food systems. He has served as a member of scientific committees on different food safety conferences (1st National Food Fraud Conference, KNUST, Kumasi; Food Safety Conference, Ho Technical University, Ho). He has peer reviewed journal articles which are focused on the effect of ingredient variations on the physicochemical, functional and rheological characteristics of different food products.
